My FEEL BETTER LENTIL SOUP has 6 different veggies, is GLUTEN FREE, DAIRY FREE, VEGAN, and is packed with IRON, PROTEIN, CALCIUM, B6, AND FIBER. Unfortunately, flu season is around the corner and in this house, we eat lentil soup, not chicken soup when we aren’t feeling well SAVE for those days when you need
1 small onion
2 celery stacks sliced thin
2 carrots sliced thin
1 sweet potato peeled and diced
1/2 tsp salt
1/4 tsp pepper
1 tbsp curry powder (optional)
2 cups lentil (any variety)
4 cups veggie stock
5 cups water
4 stalks of fresh oregano
5 ounces of spinach
Calabrian chili pepper
-To a large pot, add the olive oil and heat over medium-high heat
-Add onion and cook for 1 minute, then add celery, carrots, sweet potato,, salt, pepper, and OPTIONAL curry powder. Stir to combine and cook for 2 minutes.
-Add lentils, stock, water, and oregano
-Bring to a boil and then reduce to a simmer. Remove the foam as the lentil cooks. Once the lentils are tender, but not mushy, remove them from heat, remove the oregano stems and add spinach.
-Garnish with Calabrian chili pepper or grated cheese.
